Giving up pork and beef is not as difficult as I thought it was going to be. However, I had a piece of baked salmon a couple of weeks ago, and some fried clams Saturday, for lunch, and mushrooms for dinner. l am still eating chicken once or twice a week. Mostly I am eating quite a bit of mushrooms, onions, and peppers.
My mushrooms will be sauteed today, and my sweet potato will be baked. and I hope I have some broccoli in the freezer. I don’t want to make a big deal daily out of cooking. However, if I’m going to stop eating meat completely; I need to find other food options besides mushrooms.
Breakfast is not a problem I usually have plant-based eggs and sausages. Due to the amount of sodium in them, I eat the eggs and sausages once a week. I’ll also have Almond milk, cereal, pancakes, home fries, and spinach for breakfast. My struggles are with lunch and dinner.
I’m lazy when it comes to cooking, so it takes more effort for me to think about what I am going to eat. I probably should meal plan and prep, but it doesn’t work for me. Especially when my Rheumatoid Arthritis (RA) acts out; on those days I don’t feel good enough to cook. When I am in a flare I usually get takeout. More than likely the foods that I planned and prepped for will go to waste depending on how long the flare may last. I will figure out something because I am definitely giving up meat, It is just a matter of time.
I read on Google that plant-based meat analogues (a person or thing seen as comparable to another), edible insects and cultured meat will replace meat in the future. Plus, (per Google) one of the reasons to stop eating meat is to lower a persons risk for heart disease. Since I already have heart disease me not eating meat, especially pork and beef will have a positive effect, along with my treatment, a low fat diet and exercise.
